Sweet & Spicy Herb Chicken Stir Fry

Typically for me, weeknights in the kitchen is pretty simple. After being at work for 8hrs and then pushing throw a gym workout, the last thing I want to do is stand on my feet for hours in a kitchen. Don’t get me wrong I love to be in the kitchen but if I don’t have any energy, then it’s not even fun.

So Monday’s are usually simple. Stir frys, simple protein with a couple veggies. This is a dish that you can make under 10$ as well. Also featured with this dish is my “Spicy Herb” rub that added an extra kick of seasoning.


INGREDIENTS

2 medium size chicken breasts

1/2 red pepper (cut in cubes)

1/2 green pepper (cut in cubes)

1/4 white onion (cut in strips)

1/2 zucchini squash (cut in cubes)

3 tbsp of olive oil

2 tbsp of soy sauce

2 tbsp of honey

3 tbsp of ZayLaSoul Spicy Rub

1 can of cut pineapples


Grab your favorite non-stick pan, set to a medium flame and add a few tbsp of olive oil. Cut chicken into cubes and pan sear on medium until browned. Add 2 tbsp of the Spicy Herb blend half way thru to get the flavor going. You can also marinate the chicken overnight for maximum flavor. Once the chicken is done toss in the veggies and pineapples along with the honey and soy sauce. Mix and stir for a few minutes and then add the remaining amount of Spicy Herb blend.

Then BOOM, dinner under for less than 10$ and under 30mins to prep and cook.
